One of several key articles written during Szent-Gyorgyi's last year in Groningen, this described his attempts to discover the oxidation mechanisms in three groups of plants: those which showed a complete reaction when treated with guaiacum (guaiacum turns blue when oxidized, and is used to test for peroxidases or blood stains)--potatoes, apples, pears, and bean pods; those which showed only a partial reaction--turnips, grapes, carrots, and celery; and those which did not react at all--cucumbers, radishes, melons, and pineapples.
